LIKES: Comes programmed to cook six of the most common fried foods, or use the custom setting to easily manage time and temperature. The temperature of the 3.8-liter, 1,800-watt fryer rebounded quickly after repeated food additions, such as ten rounds of doughnuts.

DISLIKES: The digital thermometer wouldn’t display temperature drops after food was added. But if needed, this could be checked by quickly turning the fry program off and back on (set a separate timer).

LIKES: The small size is ideal for space-strapped kitchens. Though, at 1,500 watts, it was the least powerful we tested, the smaller 2.5-liter capacity helped it perform as well as the larger units. Albeit with slightly smaller batches.

DISLIKES: The basket is designed to hold more food than the heating element can keep up with. Restrict batches to 1.5 pounds.

LIKES: A filter and nozzle at the bottom of the 4.5-liter basin made the 1,800-watt DeLonghi the easiest to drain and clean. It was also the best at holding its heat after the basket was dropped in.

DISLIKES: Slow to reach its target temperature. Also, the handle shape forces your hand over the vent, so use a pot holder if it’s steaming.

LIKES: This 4.5-liter fryer is big enough to hold a double-wide basket or two side-by-side baskets, letting you fry foods with different cook times. Among the dial-controlled options, this was the only one with a timer. The most affordable of the 1,800-watt fryers.

DISLIKES: To maximize capacity, the heating element sits very close to the bottom of the oil basin, leading to more burnt bits of food.

LIKES: Two smart features set the 1,700-watt T-fal apart: the ability to raise the basket to check your progress without removing the lid, and the built-in reservoir below the 3.5-liter oil basin. After the oil has cooled post-fry, flip a switch and the oil passes through a filter and into the reservoir for easy storage.

DISLIKES: The reservoir is another thing you have to clean, and it is awkward to pour oil from.
